I use 65 psi in the back and 55 psi in the front, largely to suit comfort.
I treat 80 psi as a limit, but I got this figure from a technical document for the Mavic A319 rim that I use on my Torq, also fitted with Schwalbe M+ 700x38 tyres.
Looking again at the data for the Mavic rim (which is likely to be quite similar to the Shimano rim), it says:
Recommended Maximum Tyre Pressures:

30 103
32 103
35 88
37 88
40 82
Both the Shimano rim on the ProConnect and the Mavic rim are 622 x 19 mm.
One of the wheel technical guys will correct me if I am wrong, but I believe that the forces on the rim from the tyre pressure increase considerably when the tyre is getting significantly wider than the rim, and this occurs at a tyre width of 35 mm in the chart above.
Certainly, if a lower figure is stated on the tyre itself, then stick to that.
