Spoke diameter

Following mid drive Bafang conversions on a standard bike I guess with the increased weight and torque that one should consider upgrading the spokes in the wheels, mine are standard 2mm spokes but I am considering uprating them, any thoughts?

No need. You have added about 6 KG to the bike or the equivalent of a pannier of shopping. Does carrying shopping break spokes? The torque issue means you just have to check that your rear spokes aren't loose. Even without a motor that will lead to problems.

How about adding my weight, around 90kg and 3 fully loaded panniers on the back though?

14g/2mm spokes will be fine.

3 fully laden paniers I don't do, I have a trailer for anything over about 12 kg. My Tubus Fly rack is only rated for 20 kg!
