Any ideas as to what all these wires are for?

on the controller of my hooper shopper/ viking ego. One looks to be a throttle as it has three wires the other has two thinner wires and the White one with plastic cover over the end of it?

the white one in the front is the USB programming lead. I think the translucent two pin plug is for the light. You can check with a multimeter.

If you showed us the wires on that one at the back we could guess whether it's for a throttle.

.....they are red yellow and black and the plug is flat on all four sides

That'll be for the throttle then. Any throttle should work. Match red to red, black to black and whatever the other colour is to the yellow.

Apart from ebay do you have idea the best place to get a thumb throttle?
