First MTB to eMTB conversion from scratch

Hello,

I'd like to do my first ebike conversion: for a hardtail MTB to a hardtail eMTB.

I'm 1.93m, 85kg. The bike will mainly be used on flat surface with slicks and a locked out rockshox fork to commute to the office. However, I still want it to be a MTB to be able to have good fun in the forest with my friends. The bike needs to be L/XL and have 29" wheels. I want it to travel ~30kph without pedaling, and ~40-50kph with pedaling.

The level of assistance should be adjusted with thumb gas, 1-3 or 1-4 settings.

I want the motor to take me to at least 40kph, when I would padel at a rate of 20kph without the engine. Is this possible with a 750w engine? If so, how long does a fully loaded 15Ah battery last?

I live in the Netherlands. Ebay is not filled with great parts here, and parts on the German Amazon cost tons of money. Now I'm considering purchasing the following:
Does such a setup look OK for a first eMTB build?
