    Have you considered fitting dropper seat post, would allow her to have both feet firmly on ground when stopped. There are some that easy fitted with wireless remote fitted to handbars.

    I've spds but didn't persist with them as I had knee issues at time, not related to spds. Use cages till recently, now switched to flats. Not had any problems with flats with FS eMTB, even on roughest terrain, did loss contact on big jump (for me) luckily they reconnected before touch down...

    Cutoff is more noticeable in high assist levels which you shouldn't need on flat. Try using eco cutoff is less noticeable. The other thing to try is covering up the display and enjoy the ride while not being distracted by numbers.

    Take it for ride at night on unlit lane. Don't be surprised it you need to add more powerful battery headlight. The only down side to that bike is cable vbrakes, not good choice for ebike especially if commuting.

    They should pressure for weeks if not months but good to have one for varying pressure. Lower/softer for commuting, harder for offroad.     Most ebikes are geared so there is 2-4 gears available above the 15mph cutoff. Either you are going lot faster than 15mph, which is impressive without assist or pedally very slowly.

    These drives were designed for MTBing, how you choose to use a ebike is definitely not market E8000 is after, neither is Bosch CX. So no loss for Shimano. You may struggle to fit a dongle to E8000 anyway due to pickup and magnet design.

    You won't get a decent/capable hardtail eMTB with factory middrive and airshocks for <£2000. Might be able to build one for lot less using BBS middrive but it doesn't have controlled torque sensing power delivery of factory drives, a must for tight single tracks.

    Kitting up for the first time

    I've found overshoes help, shoes(trainers) still damp on wet days but not sodden. Overshoes are also good for frosty morning. I wear my jacket hood under helmet, dry and warm head.
