are you referring to these new Bafang displays? They are secured to the bars, powered by the ebike battery, same display to control the motor settings etc so nothing to remove, secure or charge..and waterproof, so not sure what you are on about...?
@sjpt offers good advice, but 7 year old batteries will detoriate over time so regardless of how they have been cared for, factor in having to replace, and if they do work well once you have bought the bikes then bonus
Yep need to ride to check batteries as they would be at least £400 each replacement from Oxygen or about £250 each for a non branded Dorado equivalent from Aliexpress , yosepower, pswpower etc

Agreed, check out Woosh, pretty sure they deal with cycle2work schemes and they have some powerful hub motored bikes to get you up those Welsh hills. The Camino or Grand Camino with a 17ah battery looks favourite depending on your weight/height
Genuinely good luck with the new bike. It's standard hailong battery, motor and controller parts so any issues outside warranty will be easy to fix or replace, but hopefully it'll give you many years of trouble free ebiking
