My tyres display the same pressure parameters as yours Jazper and I fiddled with various settings during my early days with the bike. In my case, in the end I settled on 65psi which allows the bike to roll easily and keeps the tyre fairly rigid within the rim. Having a sprung fork and seatpost, there is no harshness from the road surface.

On my other ebike which has no suspension and different parameters, I also elected, after some initial testing, to keep the pressures at the upper end of the recommended spectrum. So far, I have had no punctures and I feel happier with my tyres set that way though that may be simply a psychological thing.

I'm no expert in these things but I'd guess that a fair percentage of punctures occur simply due to under-inflation causing the inner tube to be pinched in certain circumstances.
