Please can someone tell me if its difficult to fit a throttle to a bike that only has pedal assist, thanks

If you're lucky, there'll be a connector on the controller for one. It will have three wires: red, black and another colour, probably green or white.
If there's no connector (unlikely), you'll have to replace the controller with a different one, which will cost £30 to £60, depending on which one you get. A £60 would have much better features and make your motor run more smoothly and quietly.
