Cutting the pedal assist cable

Hi guys..bought one of the cheap chinese bikes. Vivi mountain ebike 350 watts
or well that's the sticker on this one haha

I have the throttle connected but the pedal assist is driving me nuts. Can I snip the cable to the pedals? Will the throttle still work? Just double checking before I snip that cable. Much thanks

Why would you cut the cable ? Just unplug it.

More the issue why is it driving you nuts ?
