There's a comprehensive set of stats out this week which give, for each Local Authority in England, over the latest 4 year period.
Prevalence of people cycling once/month, once/week, 3/week, 5/week
Type of Cycling.
By gender.
By age.
By disability/impairment. (Substitute new word in your head if these terms suddenly become offensive.)
By ethnicity.
There is a pdf and about 30 zipped up data tables. I think the data is based on sample surveys of 500/area.
Quite wide error ranges on some stats, though.

The way to read it is to dive in to the SSs if you are a data processing nerd, or read the pdf and find the appropriate table number.
