I have been reading through the threads trying to find info on how to build / wire / get a cruise control system to work. What I have found so far is switchable adjustable throttle assist which would not be the same.

I don't have an LCD or LED display on my ebike, I just have throttle and PAS.

what I am aim for is a setup - which may include wiring into my speedometer that reads the speed of the bike / rotation speed of the front wheel and keeps it constant once turned on. So If I decrease the amount I pedal, the bike will compensate to maintain speed (i.e. provide more power up to PMax) and equally if I start pedalling faster/harder the motor effort will be reduced.

I suspect this would involve isolating the PAS for this.

I'm pretty sure you are going to ask for pics of the controller so you can see if it is possible, but I can't get them until next week. I'm just starting to look into this now as a feasibility study.

Ok, so I've been thinking about this a bit more. The output from a speedometer might be difficult to determine. Could I put a dynamo on one of the wheels and use the resulting voltage generated to determine my speed - probably using some sort of basic potential divider circuit?

I'm probably heading off miles down the wrong road, but then I'm a Mech Eng, not an electrical or electronics engineer so I don't really understand these small fiddly things as much as I would like, I just know some basic principles

I would have thought it was easier to get a controller that supports cruise control, and then wire in a momentary switch to engage cruise at whichever speed you want. Both the S12P and S12S support this - I've had both running in this mode. Very handy, although I still prefer just using the PAS and peddling.
