What do you think about using this motor, speed controller for a mountain bike to be a electric bike?

Loads of people have done it already. Go for it. You need a decent ESC to get smooth throttle take up.

I am not sure though, that the motor is powerful enough to make the bike go 20miles per hour. What speed do you think the motor is able to get on a mountain bike?

Also, I know making a custom made battery is better than buying a battery already made. Although, what is the maximum number of batteries the motor, and speed controller can handle?

can somebody explain to me why using an RC motor for e-bikes? Would you expect it to last 10,000 miles?

It can run 650w to 1000w, so that should be enough. Your bug problem is going to be how to get from 50,000 rpm down to 270rpm for the back wheel. That's a reduction of about 200:1, so you'll need at least two stages.
