You can use a Cycle Analyst with ANY ebike.
Get the SA (stand alone) version and simply connect the supplied shunt to the wires between battery and controller.
As the OP rightly said,if you use a 9 speed cassette like me ,the chain canbe nearly an inch out of line in top and bottom gear.

I bought 3 Clarkes chains on sale from Halfords for £3 each.
The first slipped after less than 180 miles and the other 2 went in the bin.
Bought KMC x93 chain and they last over 1000 miles each and thats with a BBSHD and 50% offroad riding.

I would say it depends how expensive your cassette is.
My 11T-34T 8 speed cassette is £9 from Halfords so I am happy to wait until it starts slipping in the top 2 gears before changing the chain (£11).

Latest GT Power instructions show the positive wire connected through the meter to the load but it will work either this way or the way I describe above.
I have 3 of these wired this way between my bulk chargers and batteries...

Whitby is my favourite place in the UK and I visit at least 3 times every winter.
I am going to ride my bike from Barnard Castle to Whitby this summer. There is a Sustrans route and its 74 miles so a canny day out.
I have 64Ah of batteries fitted so up to 150 miles at a push but my butt would give up first!
