    Easier replace whole system, Shimano M315 brakes are cheap as on special. If want better brake go for Deore, differently step up in performance.

    Could see market for it in professional road racing. For ebikes better of using higher loss shaft drive systems from motorbikes. With ebikes , especially commuters low maintenance and reliability is far more important than efficiency.

    Looks like electrical cable, someone tucked surplus length up into tube out of way. Maybe unused lighting cable. Ask shop to move to better location. If you want to do it your self, then remove left crank (need a crank puller) and engine cover. There should be some youtube videos on this.

    The kit middrives are typically cadence sensing, but there maybe some torque sensing ones. Factory middrives like Bosch are torque sensing. Don't expect kit motor to give same feel as Bosch, but they will still flatten hills.
