I think the easier way to convert a fatbike might be via a chaindrive system/kit like the bosch mid drive stuff as it avoids rebuilding wheels but does mean chaining the bb. The kit in the picture is one of these VVV and assuming they have the same amount of spokes you just need a good wheel...
