My feeling is if the bike originally had a 35a controller then the bike certainly isn't rated for 250w . Would be interesting to know the battery continuous discharge rating .

Have you missed any wiring out ? Show us the stuff you actually cut off . One just doesn't accidentally cut all wiring off in one go. We can tell you the pcb codes /markings and what they mean and do , though we need to see more.
