If the display/lcd is going blank/turning off then the issue/interuption is between it and the battery. Either the battery discharge connection or the lcd is at fault.

Two motors have been done though is illegal as undoubtedly the desired motor wattage will be above 250w. You need a good hub if going the hub route , a Xiongda two speed hub or a Bafang BPM or CST.

What ever the issue I don't think you can just swap the motor out for any other one, if I'm not wrong the motor wire connector is different to the std 9 pin Julet commonly used elsewhere. Is ot a scraping noise or electrical contact noise ?
