I attended a local Cycle Fest recently, organised at a local park by a local bike shop. Many of their suppliers were present wth their demo bikes. They had all kinds of bikes there, including ebikes and It was a great way of trying out different bikes.
I had to hand over a driving licence and credit card, then I was free to try out any bike I wanted for upto 40mins at a time.
Sadly due to Bosch not yet having certification for their new 2018 PowerTube batteries, some of the 2018 bikes were not there to be demo'd.
I concentrated on just ebikes as that is what I wanted to purchase, and I was restricted to only being able to try out the larger sized bikes.
I started with the Cube Reaction SLT with front suspension, Bosch CX motor and Purion display. It was a very comfortable bike to ride, and made me realise that a mountain bike with a motor would be perfect for my needs..

I then had a go on a Haibike Trekking again with the Bosch CX. It felt pretty much the same as the Cube SLT...

Then it was time to try a Haibike with the Yamaha motor and full suspension. This made me realise that rear suspension wasn't what I wanted, even though it could be locked out. A Hardtail would be fine for me. Also, I felt I preferred the Bosch CX motor to the Yamaha. I didn't really like the display being kind of built in to the stem, although I did like how the different mode settings illuminated in different colours for easy reference...

Another one I tried was a Focus which I think had a Shimano motor. The bike wasn't configured correctly for what I wanted, with the riding position not feeling quite right for me. The motor and gears felt fine..

Quite a few different manufacturers were there which was great...

The bike shop was also offering discounts on any 2018 bike purchased on the day. I didn't buy on the day, but a few days later I did order the Cube Reaction Hybrid Race 2018 with Bosch CX and Purion display, and still got the same discount. Overall a great way of trying out lots of different bikes, even the really expensive ones
