2 lights and a switch between them to turn one light on and the other off in lieu of one light with a dip function ? Makes sense.... reckon a similar setup might be best way to go on the e-bike. Must get to grips !!

^^ I'm thinking for an eBike to use in Rural area, 2 brackets below the handlebars with a pair of the lights in your post above on mount 1 wired in as main beam and 2 of these which Geebee linked recently wired in as 'dipped beam' on the other bracket :

Waterproof 3W 1000~1300lm LED White Light Motorcycle Headlamp - Black (12~80V)

Would I be right in thinking the 2 sets of 2 lights could be wired in to come on via a 3-setting switch Setting 1 - off
Setting 2 - "dipped" pair
Setting 3 - "full" pair

... or something like that, all being powered off 36v battery through a step-down converter to a 12v supply for the 4 lights ?

Yes, that would work fine.
Somewhere on Ali-x or baba or DX you might find a suitable bar switch. Such things were commonplace for older British bikes before integrated switchgear became the norm and I'm sure I've seen the classic and resto market being catered for with such items.

Think I know where I might get one from for the handlebars. How about I use the converter to step down the voltage from 36v battery to 24V rather than 12V ... am I right in thinking this will result in the main lights drawing only 0.4Amps and therefore consuming virtually negligible power and there won't be excessive losses in the converter either ?

Have sent a query to the supplier to ask if they would supply 2 and if so at what price.

If that converter is a PWM and not a simple linear device, it shouldn't lose too much efficiency (and I've noticed it said that the lower the difference between input and output voltage required, the more efficient it is), if you use a couple of the 24v or 30V lamps you'd hardly lose anything in the step-down.
Carry on mon brave - you're being a bit of a trailblazer here, for which all of us cheapskates salute you.
Did you see the bloke with the multi-role system is also selling a cheaper one at 15W, including dimmer?

The dimmer doesn't switch between one or the other, it just cuts the output of both to low/half power, which is effective enough.

That looks mint... I was going to ask the seller if they could supply the switch in addition to the dimmer unit on its own to hook up to different lights if the ones he was supplying were going to draw too much current :). Having a pair (or one like I bought already for 36v) with a hi-low output via handlebar switch would likely be the optimum and most efficient setup for a built-in.

Tempted to try to rig up a high-powered CREE T6 with its own battery supply as auxilliary lighting.

Do we know / can we work out what current these 24 / 30V lights would draw at 24V i.e. whether <0.5A ?

A Cree t6 is designed to work at roughly 3v, 1A. (approximate figures). That makes each LED 3w. 3 LEDs in series at 9v, =9w, = 1A.
With reasonably good buck converter onboard (a guess, as 12-30v input) then at 24 volts, I would expect about 0.4 A each.
However, as always with this stuff you can't be sure until you hook it up, as the specs contradict themselves. (eg 3x5 watt = 12 watt@1000mA).
