Something I've wondered a few times, is what is the law regarding trains and taking an e-bike on it? (NON Folding).

depends where you are in the country and the train you use.
I've used my non folding bike on midlands and chiltern lines with no problems. Other than making sure there's enough space.
Sometimes train lines like you to pay extra for non folders. You have to check with the train lines specific policy though.
