I'm set up with a rackpack and single pannier. Mountain equipment co-op for the rack and Agu pannier.(Agu is a well established Dutch bike bag company)
I've a 2nd Agu pannier should the need arise. I think they are 38 ltr total. Having a rackpack on there is good so for small jaunts i can lose the main bags and just run with that for holding things like sandwiches/drinks etc. Its quite well insulated too.
Both pack and pannier came off of ebay. You can usually get a better deal there and pick up bags that originally retailed for a pretty penny, but for far less.
These are the panniers I have. Very happy with them and they are of very good quality - Built in rainproof cover.
