Ive made a plywood plate with an aluminium up stand around the front perimeter that screwed to each pedal. It’s crude and It only fits the front half of my foot but seems to work.

Perhaps a small series of progressively larger embroidery hoops (or similar), cut and bolted through the sides of your plywood plate? They start at 4 inches wide.

...or bolt on an aluminium sheet cover, to prevent your feet lifting off too far? Open toed pedal sandal for your shoes. 0.7mm-ish aluminium sheet is pretty cheap from builder's merchants, they're used to block off fireplaces. After forming the shape, you could pop rivet it through your pedal plate, so the long parts of the pop rivers are out of the way under the pedal... or round head bolt it through and nyloc nut, through aluminium chipboard joiner plates under the pedal.
