Woah, hold on tiger, the pin length on that chain is 8.6mm. I may be wrong but you should be getting 7.3mm.

I think the lowest you can go down in chainring size to get the improved chainline is 42T. This is because the chainring has to wrap around the final drive housing inwards. A 36T chainring will need an adapter and actually push the chainline further out. I could be wrong and I think Trex can...

I tend to apply both at the same time, but I would guess that I squeeze the front brake twice as hard as the rear. Seems to provide good stopping power in most conditions. This is also reflected in how often the pads wear and get changed, 2 fronts to every 1 rear.

The chain I've plumped for is a KMC X8-99. After looking at this chain installation guide, I noticed the bit in section 2 that says some chain rivets are peened and cannot be reused. In fact it actually creates a weak link at that point...

Big thank you to everyone who has contributed tonight. I now feel I have the confidence to go ahead and replace my chain. Luckily Halfords have both the KMC X8-99 chain that kinninvie uses, plus the chain tool that Alan uses :)
