I’ve had better results setting the ISO max to 800, low sharpness, and 24fps. Also used spot metering and angled the camera slightly down to avoid blinding headlights.

I’ve had the best luck setting the GoPro 7 Hero Black to 2.7K 30fps with low sharpness, flat color, and ISO maxed at 1600 for low light. It helps keep noise down without making things too dark. For night rides, I mount front and rear lights angled slightly away from the lens to avoid glare. I also use a side cam to capture full road view in 360 with better detail on number plates.
