Here is the information you asked for:

The left hand control is as I described and it changes the rear 7 gear sprockets in use.

The right hand control is for the front three chainrings, changing those.

The combination gives you the 21 gears, seven with each of the front three chainrings.

Basically use the largest chainwheel for high gears when the going is easy and mainly flat. On mixed territory the middle one will suit, but if in a constantly hilly area with lots of climbing, use the smallest chainring to give you the seven lower gears. Once you are used to it, refine the way you use the gears minute by minute to suit the circumstance.
